We’re well into football season here in Texas, and you know what that means? Football equals tail-gating! For those unitiated into American Football, tail-gaiting is the phenomenon where fans gather before games with cookout and/or picnic type meals served out of the back of their cars or on the back of their pick up trucks, specifically with the truck’s tailgate down., hence the term, “tail-gating.”

Not only is football extremely competitive, but so is tail-gating. Organizations, clubs, families, and even churches, vie for who serves the tastiest on-the-go meals.

In Texas, many of these repasts are Tex-Mex themed with spicy dips, corn chips, and plenty of salsas. One of my favorites is an easy to make white corn salsa served with corn chips and Jicama slices.

1. Drain 3 cans of white corn

2. Add 1/2 cup mayo

3. Finely chop 2 jalapenos, 1 bunch green onions, including white tops, 1 red pepper, a good-sized tomato, 1 bunch cilanthro leaves

4. Add shredded pepper-jack cheese or crumbled queso fresco

5. Sprinkle with garlic salt and black pepper

Mix together all ingredients and keep chilled before serving.You might need to add more mayo if extra cheese is added.
