Is your “sweet-tooth craving” demanding satisfaction, but under these COVID-19 restrictions you can’t run out to buy a treat and you don’t think you have the ingredients on hand to bake?

I challenge you to make a quick and easy pie. I’ve already given you in a previous blog the step by step instructions to make pie crust. I see you rolling your eyes! But seriously, put your hands to it and you’ll have this immense pride of ownership in your creation!

The easiest pie to make is a buttermilk chess pie. You don’t have buttermilk you say; then make it! Simply add 1 tablespoon of vinegar or lemon juice to one cup of whole milk and set it aside. You can watch the chemical experiment take place right in front of your eyes as curdles form and thicken up the milk.

Here we go!

Preheat your oven to 350. Cream together room temperature butter, sugar, and eggs till light and fluffy. Add the remaining ingredients and mix well. Pour the batter into your just created unbaked pie shell. Bake for 50 minutes to an hour or until golden and semi-solid in the middle. You don’t want the pie to jiggle, but to be softly firm.

1/2 cup or  1 stick of room temperature butter

2 cups of sugar

3 eggs

2 rounded T of flour

1 cup buttermilk

1 tsp vanilla

1/2 tsp nutmeg
