I’ve been doing some contract work once a week at a local private school. With retirement, I’ve gotten out of the habit of making a to go lunch. So, I remembered this chicken salad recipe that is quick and easy to make, especially if you use a rotisserie chicken.

The directions are basic – mix all the ingredients and chill before serving. It’ll keep nic and fresh for a week in the refridgerator. I like taking carrot sticks with me and/or a sliced apple to eat with it.

What’s a quick to go lunch you like preparing?

1/2 cup toasted chopped pecans or walnuts

3/4 cup mayo

1T chopped fresh tarragon or rosemary

1 tsp lemon rind grated

1 T lemon juice

1 tsp salt and 1 tsp pepper

3 cups cooked and chopped chicken

1/2 cup chopped sweet onion

2 stalks chopped celery

2 cups seedless red grapes halved
