School is in full swing and I’m all about quick and easy, so break out the crockpot and let’s cook low, slow, forget-about-it, flavorful family dinners. One of my nieces shared this recipe with me.

Combine all ingredients in a crockpot and roll the roast in the mixture. Cook on low overnight or all day, for eight hours (can go longer). When done, pull apart with two forks in the crockpot and let the meat sit in the juices on warm till you’re ready to eat.

Serve with tortillas or buns, fresh chopped cilantro, sliced avocado, lime wedges, sour cream, and grated cheese.

3 lb pork butt roast

2 cups (16 oz store bought) salsa

2 T chili powder

2 T dried oregano

2T cocoa

3 tsp salt
