Are you having company for Christmas morning brunch? Here’s a family favorite I borrowed from one of my sisters. You can make and bake this blueberry coffee cake ahead of time, freeze, and bring to room temperature the night before serving. It gets even moister after having been frozen. Keep it covered till time to serve.
Beat the sugar, butter, and egg till light and fluffy. Stir in wet and dry ingredients. CAREFULLY fold in fresh blueberries. Spread the batter into a greased and floured 13 by 9 inch baking dish.
Mix topping ingredients with a fork. Sprinkle over the batter. Bake at 375 for 45 minutes. This coffee cake is great served at brunch with a breakfast casserole.
