Another oldie but goodie recipe is for Fruit Pizza. Enjoy the fruits of a late summer season like berries of all sorts, fresh figs, and grapes in a picturesque dessert that is quick and easy.
The recipe calls for a roll of sugar cookie dough, but I make my own gluten free version. Your family will be so impressed! They will think you bought it at a fancy pastry shop. You can also make this in individual tartlet pans. or a large springform pan.
Pat the cookie dough into an ungreased 14 inch pizza pan. Bake at 375 for 10-12 minutes until lightly browned. Beat the cream cheese and powdered sugar till smooth. Spread over the cooled cookie crust. Arrange the fruit on top.
In a saucepan, bring sugar, orange juice, water, lemon juice, cornstarch and a pinch of salt to a boil stirring till thickened and bubbly. Cool and brush over fruit. Chill and store in the refrigerator. Slice like a pizza and serve to everyone’s delight!
