Holidays are around the corner! We’re all waiting to the last minute to participate in, initiate, and/or implement family gatherings. I’ll be the first to tell you that “last minute” is not in my comfort zone.

However, I, like millions of others, are learning to step out of our comfort packages tied up with bows and into wide open packages tossed into grocery bags!

This year, according to the news, we cannot rely on our favorite baking mixes or even baked items being available because of food shortages and logistics. I find myself turning more and more to old-fashioned short cuts that my mother taught me when mixes were not available and holiday treats were all home-made.

I previously shared with you the Master Baking Mix from which you can bake so many last-minute delectables. This post features muffins.

Preheat oven to 400. Beat together in a bowl the wet ingredients. Add in the dry ingredients and stir just until dry ingredients are moistened. Spoon into greased muffin pans or in cupcake papers and bake for 20 minutes.

The following options are variations that can be added to this basic recipe. Just raid your pantry and be creative!

  1. Add chopped dried fruit and/or nuts to muffin recipe and bake as a fruit bread; use greased 5×8 loaf pan and bake 40 minutes at 350.
  2. Add drained fruit, chopped nuts, chocolate chips, or chopped dried fruit.
  3. Replace one third of mix called for with quick-cooking oats or all-bran cereal.
