I love a fresh cut papaya with a squirt of lemon or lime juice and a sprinkle of salt. However, I throughly enjoy the zingy flavor of a fresh papaya salad even more on a warm summer evening.
Peel and cube one medium papaya. Finely mince one jalapeno minus the seeds and ribbing. Toss with fresh, chopped cilantro and the juice of two large limes. Add a pinch of salt and sprinkle with crumbled white queso cheese.
