School is back in session and you’re probably scrambling to make healthy, tasty sack lunches for your family. Each year we say, “this is the year I’m packing fabulous lunches!”
Several years ago, my daughter in law shared with me her recipe for scrumptious pimento cheese. There is no comparison between her’s and what you buy ready-made in the stores! My grandkids love it as a sandwich filling or as a dip for carrot discs, cucumber slices, and celery sticks.
In a mixing bowl, add pimientos, grated cheese, and cream cheese. Mix at slow speed. Gradually add the Worcestershire and mayonnaise. Increase the speed of mixing until a smooth consistency is reached. This basic recipe can be jazzed up for more mature taste buds by adding chopped fresh jalapenos, olives, or green onions.

4 cups shredded cheddar cheese
1 8oz package cream cheese
1 T Worcestershire sauce
1/4 cup mayonnaise
