We’re all ready for healthy eating and what better way to do so than with a big bowl of hearty beef and vegetable soup. There’s no need to watch a simmering pot all day! This recipe can be completed in your crockpot and forgotten about or created in 45 minutes right before serving. One of my sisters shared this recipe with me and it’s definitely a keeper!

In a large dutch oven, brown meat till no longer pink. Drain excess fat as needed. Add chopped onions, celery, and green pepper. Saute with meat till tender. Add spaghetti sauce, diced tomatoes, beef broth, and seasonings. Bring to a boil. Reduce heat and simmer for 20 minutes. Stir in a bag of mixed vegetables and a can of Rotel tomatoes. Return to a boil and simmer for an additional 15 minutes or until vegetables are tender.

1 lb ground beef

1 cup chopped onion

1/2 cup diced green pepper

1 cup chopped celery

2 garlic cloves mashed with 2 tsp salt

fresh ground pepper to taste

1 can or jar spaghetti sauce

2 cans or 1 carton beef broth

1 can diced tomatoes

1 can Rotel diced tomatoes with chilis

1 16 oz bag frozen mixed vegetables

optional, 1 small bag frozen cubed hashbrowns
