While discussing favorite summer deserts with a foody friend, we decided that Tiramisu was a definite contender for a first-place summer desert.
The grading criteria consisted first of taste, check for yumminess. The second was no-bake served cold, check for chilled sweetness. The third was the ease of making, check for quick and easy. So, I whipped up a gluten-free version that very week, and we so very much enjoyed it! And, it gets better and better with each leftover day.
Mix egg yolks and sugar till creamy. Add vanilla and cheese. Make strong coffee and mix with the liquor. Quickly dip ladyfingers into coffee and liquor mixture without them becoming soggy. Layer the dipped ladyfingers with the cheese mixture in a straight-sided glass dish. Sprinkle each layer with a little cocoa. Top with the last layer of whipped up whipped cream sweetened with powdered sugar. Sprinkle chocolate shavings on top. Refrigerate overnight before serving.

1 cup or 8 oz marscapone cheese
3/4 cup strong coffee
3 T drambouie liquor
1 pkg ladyfingers
1 T cocoa powder
2 T grated chocolate
1 pint whipping cream
1/4 cup powdered sugar
