Is there such a thing as too much chocolate? Not in my book!
February is the month for giving and receiving chocolates to and from your sweetheart. Whether it’s an exquisite assortment in a gift box, or one outstanding slice of cake, it really doesn’t matter.
When I think of chocolate, I visualize my mom’s face; eyes closed, a beatific hint of a smile on her face as she ever so slowly savored a favorite chocolate morsel. For you see, she loved chocolate but limited herself to one treat a day, usually right after lunch. We enjoyed watching her delight upon receiving a “box of chocolates!”
So, if you’re thinking of gifting chocolate this month, I have a favorite no fuss, easy peezy, chocolate cake recipe that even non-bakers can make. One of my daughter’s in-law passed it on to me and it never disappoints! Watch the chocolate lover in your life clap their hands in gleeful anticipation on receiving this gift of pure chocolate decadence!
Combine all ingredients except for chocolate chips in one bowl and beat till fully mixed and fluffy. I told you it was easy! Fold in chocolate chips. Grease and flour a large bundt pan. Spoon in the batter. Bake at 350 for one hour and 10 minutes or till a toothpick inserted comes out clean. Allow to cool and set in pan for fifteen minutes before inverting on a plate. This cake can be made ahead and frozen for later use. Sprinkle with powdered sugar for serving. It is so rich that no frosting or topping is needed.

1 chocolate cake mix
1 large package of instant chocolate pudding mix
1/2 cup of warm water
1/2 cup of vegetable oil
8 oz sour cream
4 eggs
1 large package of semi-sweet chocolate chips
