Quite often at this time of year, when the days are starting to get shorter, but the temperature is still sizzling in the 90s at sundown, the last thing I want to do is cook supper. Yet, we’re famished and want something to satisfy our hungry tastebuds.

Cold Spicy Summer Soup is the answer with no heat required for creating. This soup is best served very cold after it has chilled for at least 24 hours.

Combine all prepared ingredients and chill. Serve with a dollop of plain yoghurt or sour cream, crusty croutons, and extra fresh herbs for garnish.

1 bottle Bloody Mary mix 

1 tsp horseradish

2 garlic cloves mashed with 2 tsp salt

3 ribs of celery chopped

1 sweet onion chopped

1 grated or finely chopped zucchini

1 box frozen edamame

1 small handful each of chopped fresh parsley, oregano, and thyme
